Oat Bran
Muffins
These oat bran muffins are high
fiber, low fat, free of trans
fat and sugar free to boot! They
get their sweetness from apple
juice and raisins.
1-½ cups
oat bran 1- ½ cups buttermilk 1- ½ cups
all-purpose flour 1 Tbsp.
baking soda ½ cup corn
oil, safflower oil, or other
mild oil ½ cup
concentrated apple juice
(frozen, thawed) 2 eggs ½ cup
raisins or dried cranberries,
soaked and drained ½ cup
finely chopped pecans (optional) ½ tsp
ground cinnamon ½ tsp
ground ginger 1 tsp
ground nutmeg 1 tsp
ground cloves
Blend all ingredients in a large
mixing bowl until well
moistened. Drop by spoonsful
into muffin cups greased or with
paper liners. Bake at 350
degrees approximately 15 minutes
for standard sized muffins. For
mini muffins, bake 8-10 minutes. |
