Oatmeal
and Whole Wheat Pancakes
1 cup milk ¼ cup
yogurt 1 medium
apple, peeled and pared 1-1/2 Tbsp.
corn oil, safflower oil, or
other mild oil 1 egg 1 tsp honey
or sugar
Place
above ingredients in blender jar
and blend until apple is finely
grated. Set aside.
In a mixing
bowl, place the following:
½ cup old
fashioned rolled oats ½ cup whole
wheat flour ¼ cup
unbleached flour 1 tsp
baking soda
Add liquid
ingredients to dry ingredients
and stir until well blended.
Bake on lightly greased
non-stick griddle. Turn when
edges are firm. Be careful in
turning these delicate pancakes.
Bake to a light gold color.
Serve with
honey or maple syrup.
